Russia - Dairy products for rehabilitation after COVID-19 will be developed in the North Caucasus Federal District

Russia (bbabo.net), - Stavropol yogurts, kefir or sour cream, which help to recover from the coronavirus, may appear on Russian shelves in the near future. Now scientists, together with manufacturers, are developing innovative dairy products for post-COVID rehabilitation.

According to the Stavropol State Agrarian University (SSAU), the new line is going to be launched by the end of the year. Products will contain more antioxidants and have a beneficial effect on the heart and blood vessels. It will be created in the laboratory for the development of innovative dairy products, opened at the Pyatigorsk Dairy Plant together with SSAU.

- Today, the climate is changing, the environment is deteriorating, COVID has appeared, more people are coming to Kavminvody to recover from the coronavirus. Therefore, we need products that will help to deal with the consequences of adverse factors, - explained the general director of the plant Konstantin Sukharev.

The installation of the Danish analytical system for assessing the quality of milk in the selection control laboratory of the SSAU will contribute to their development. It will allow checking the raw materials from each cow and forming herds of cattle with the desired properties of milk.

As Sergey Oleinik, Doctor of Agricultural Sciences, Professor of the Department of Private Animal Science, Breeding and Animal Breeding, SSAU, told the correspondent, in accordance with the federal law on livestock breeding farms, it is necessary to monitor the main indicators of milk. This service is provided at the university to eight specialized enterprises. But it didn't stop there.

“Now we are creating a Center for the Management of Highly Productive Animal Genetic Resources,” Oleinik explained. - It will include a genetics laboratory, where we will be able to conduct molecular genetic examinations - this is a demanded service. Next in line is the opening of the embryology laboratory. Due to the difficult veterinary situation in the region (due to restrictions due to foot-and-mouth disease. - Ed.), it is problematic to export breeding stock from Stavropol. However, the supply of embryos is not prohibited. We also breed highly productive cattle of the Holstein and Jersey breeds. So the delivery of embryos is also a popular service, and we will be able to provide it to interested companies.

Within the next month, the laboratory of selection control will be commissioning the equipment of the Danish analytical system. It will allow you to fully analyze the fatty acid and protein composition of milk. According to Sergey Oleinik, scientists have found that an increase in the proportion of unsaturated hydrocarbons makes it possible to enhance the antioxidant properties of this raw material. Products from it can increase immunity and prolong life. The equipment will also help to carry out the selection of different fractions (for example, casein) and vary the protein composition.

- We discussed all this with the management of the Pyatigorsk dairy plant and outlined ways to develop innovative products that are not currently available in Russia, - added the doctor of agricultural sciences. - In general, the analytical system will help improve the quality of raw milk in the region. There is another interesting nuance here. We are talking about somatic cells. It is believed that if their number in milk increases, then its quality decreases. According to existing standards, in the manufacture of products for general consumption, one cannot use milk, one milliliter of which contains more than 750 thousand somatic cells. In the West, the requirements are even tougher, where the limit for healthy cows is 200,000. Somatic cells themselves are not dangerous, but they show that inflammatory processes are taking place in the animal's body. The analytical system we have acquired makes it possible to divide cattle into four groups.

The first - completely healthy animals, the second - those in whose body the inflammatory process has begun, but the level of somatic cells does not exceed 200 thousand, the third - sick, the fourth - whose milk can no longer be consumed, it must only be disposed of.

The new equipment will also help scientists conduct breeding work and form cattle herds with desired milk properties. The technique will allow you to determine which cows have the highest quality milk, while bulls can be assessed by the performance of their daughters. Thus, parental pairs will be selected to give offspring with the best characteristics. As for the given properties of milk, we are talking about its fatty acid and protein compositions.

- The selection process is not fast and takes years, but even now, by conducting diagnostics, we can select animals and form controlled groups for the desired purposes, - Oleinik added. - As soon as we install the analytical system, we will immediately start working with dairy raw materials and form groups of animals in order to receive high-quality raw materials for the manufacture of innovative products that help recover from covid.The head of the laboratory for the development of innovative dairy products is Vladimir Kaishev, Doctor of Economics, Corresponding Member of the Russian Academy of Sciences, owner of the agricultural company "Village named after GV Kaishev".

- The laboratory is a scientific institution, it works not for one enterprise, but for the entire industry, - Vladimir Kaishev told the correspondent. - Today, rehabilitation after the coronavirus is relevant. The laboratory has been operating for two years, recently they decided to create products that help during post-COVID treatment. Such studies usually take years, but we will work at an accelerated pace. Now we are at the beginning of the journey.

According to him, the developments of the laboratory in the future can be used in the manufacture of various types of fermented milk products, including kefir, sour cream, yoghurts. The main thing is to comply with food safety requirements. As an example, Kaishev cited iodized salt. Scientists have determined what content of micronutrients in it is useful and safe for humans, and it is sold in almost all stores. Innovative dairy products can also be used for general wellness, with all relevant information for consumers indicated on the packaging.

Interesting "dairy" research is being conducted at the North Caucasian Federal University. Thus, at the Faculty of Food Engineering and Biotechnology, under the guidance of Academician of the Russian Academy of Sciences Andrey Khramtsov, a line of original recipes for innovative cosmetic products based on whey has been developed. It includes three hair products - shampoo, balm, mask. Testing has shown that the beneficial substances contained in the serum, yeast cultivation products, as well as additional ingredients included in the formulation do not have a skin-irritating effect, help restore hair structure and prevent baldness.

In addition, NCFU scientists have developed a form of zinc, which is proposed to enrich milk. As noted in the NCFU, the population of Russia and some other countries is deficient in this trace element in the body.

- Many people try to fill the deficiency of zinc with the help of vitamin-mineral complexes and dietary supplements. But in pharmaceutical preparations, inorganic forms are mainly used - oxides, salts. When they are taken, five percent of the trace element is absorbed. We proposed a new form, in which this indicator is several times higher, - said Andrey Blinov, Associate Professor of the Department of Physics and Technology of Nanostructures and Materials, NCFU.

This is a complex of zinc with vitamin B2, riboflavin and the amino acid - ellyzim. Scientists took into account the optimal compatibility of the elements. It was possible to increase digestibility due to the fact that the new form is colloidal, that is, it is presented in the form of a solution. During the research enriched whole and pasteurized milk.

- There are currently no such products on the domestic market, - said Andrey Naghdalyan, Associate Professor of the Department of Food Technologies and Engineering of the NCFU. - Milk is a unique multi-component system created by nature. When various substances are introduced into it, stability may be disturbed, which will lead to various negative consequences. Zinc or other trace elements, having introduced an imbalance in the structure, will not be absorbed at best, and at worst, they can cause allergic reactions or a toxic effect. The study confirmed that our form of zinc is highly biologically active and digestible, and does not cause changes in the colloidal system of milk.

Last year, milk production in the Stavropol Territory amounted to 507.3 thousand tons, which is one percent more than in 2020. The farms of the region contain 131.3 thousand cows - the number of livestock has decreased by 6.2 percent over the year. In 2020, feed prices have risen sharply, and cattle keeping enterprises have found themselves in a difficult financial situation. From the federal reserve fund, 10 billion rubles were allocated to compensate part of the cost of purchasing feed for dairy livestock, of which 91.5 million were allocated to livestock breeders in the Stavropol Territory.

From 2022, two more types of state support for livestock breeders will be added to the existing types of state support, including the reimbursement of part of the costs aimed at increasing their own milk production. The Ministry of Agriculture of the Stavropol Territory reported that in the next few years it will be possible to increase milk yield in the region thanks to the implementation of a number of investment projects. So, in the Shpakovsky district, a dairy farm for nine thousand heads with an annual production of up to 100 thousand tons of raw materials will be modernized. The total cost of the project is three billion rubles.
