“Many people think that New Year's salads can be safely finished on January 3 and 4, but these people are deeply wrong,” says technologist Dmitry Bystrov, Ph.D., associate professor at Moscow State University of Food Production.

As an example, he cites forshmak, a cold appetizer popular on the festive table, for the preparation of which herring, eggs and butter are used. “If we are talking about these three ingredients, then they can be stored in the refrigerator for no more than 36 hours. If onion is added to the forshmak, and the onion works as a preservative, then it can slightly extend the shelf life, "explains Bystrov.

However, all this is relevant if the forshmak was stored in the refrigerator and was not transferred several times from one plate to another.

“If the dish was spent half the night on the table, and only then it was put into the refrigerator, then it’s definitely not worth it. With a high degree of probability, the forshmak is already spoiled and unsafe for health, "warns Bystrov.

The lifespan of aspic and jellied meat is slightly longer - they can be stored from 36 to 72 hours at a temperature of about 8 degrees. “Aspic and aspic are the most favorable environment for the development of microorganisms. In laboratory conditions, all microorganisms are inoculated on a gelatin medium - a similar medium with aspic. And they grow well there, ”says the technologist.

As for salads, their shelf life directly depends on the ingredients.

According to Dmitry Bystrov, "Olivier" and salads similar in composition (with boiled vegetables and eggs) live up to 18 hours without dressing and 6 hours with dressing. "If we talk about salads with poultry or smoked meats, such as Caesar, their shelf life is from 12 to 18 hours, depending on whether the salad is dressed with sauce or not."

The most careful thing is to finish eating salads with fish and seafood. According to the technologist, these products deteriorate the fastest, so it's best not to leave them in the morning.

“If you want to eat your favorite salads all the holidays, it's better to cook small portions. The next day they took it out of the refrigerator, ate it, but this is the maximum. The salad prepared on December 31 should be finished on January 1, ”the technologist sums up.

According to Elena Doronkina, nutrition specialist and founder of GetVegetable, the service for the delivery of fruits, vegetables and proper nutrition, meat salads will last 3-4 days after preparation, if they are not seasoned and stored in the refrigerator in tightly closed containers.

“The temperature should be no more than 5 degrees. This is the main condition for them to be usable for as long as possible. The same applies to meat, fish dishes, poultry and cuts of sausages, boiled pork and cheeses. You can also either put the slices away in a separate container or cover the plate with foil or cling film on top, ”she explains.

As for hot meat or poultry dishes, Doronkina advises to reheat them as best as possible. “And if you find mold on a dish, do not eat it, but dispose of it immediately, as it is fraught with poisoning,” she adds.

As the chef Konstantin Ivlev said earlier in an interview, homemade salads live a little longer than those prepared in production. “Of course, mayonnaise salad cannot be stored for more than two days. Yes, and two days can only be stored at the correct temperature. You took out the salad, put it on a plate and put it back in the refrigerator, ”he said.

According to him, carrots spoil the fastest, and if there are onions in "Mimosa" or "Herring under a fur coat", the salad becomes "dangerous" even faster.
